Recipe for Creuse cake, method by Castel Château de Poinsouze campsite
Ingredients (for 8 people)
– 120 gr unsalted butter
– 100 gr white sugar
– 100 gr brown sugar
– 90 gr flour
– 125 gr finely ground hazelnuts
– 5 egg whites
– Hazelnuts for decoration
Utensils required
– 20 cm round cake tin (lightly buttered)
Start by preheating your oven to 160°C (thermostat 5-6). Blend flour, sugar and finely ground hazelnuts. Add melted butter and mix well. No need to whisk egg whites, just add to your flour mix and incorporate well until an even light and creamy texture.
The mix is ready, lets go to the next step ! Pour mix into your lightly buttered round cake tin (its important to be quick in order to maintain the light texture of the cake). Place in the oven for approximately 30 to 40 minutes. Your cake is cooked when the top is lightly browned and when the point of your knife comes out clean.
Finally, turn out cake onto a cooling rack, allow to cool and dust with finely ground hazelnuts on the top for decoration.
