It's difficult to imagine cuisine that could be more comforting than that of Pas-de-Calais. While you're staying in Guînes, you'll get the chance to taste some of the many local specialities, including Maroilles, named the most elegant of strong cheeses in the year 960 by the bishop of Cambrai. For your main course, try the 'Welsh', a dish made using sliced bread, melted cheddar, eggs, mustard and beer, mussels and chips, or the 'carbonade flamande' which is a beef and onion stew with butter, bread (or spice bread), sugar, mustard and beer. This is one of the most popular dishes in northern France!
